U is for Upside Down and Underneath

If you are like me, you experience days when everything is a mess. Nothing goes the way things were planned. Schedules are missed. Tasks remain undone. Tempers flare.

An upside down day.

Maybe the only thing to do is go under.

He will cover you with His feathers;you will take refuge under His wings.His faithfulness will be a protective shield.Psalm 91:4

I used to laugh at the commercial where the stressed mother would yell "Calgon, take me away," when overwhelmed by her responsibilities. As if a mere bubble bath could make everything right.

The truth is when you've had a very bad, no good, horrible day you should run to Jesus. Tell Him your problems and then rest under His protection. I'm not saying He will act like a genie and make troubles disappear. But He did say He would protect His children and walk with them each step of the way.

And, of course, a bite of cake might make you feel better ... how about ... Upside Down Pineapple Cake? I warn you, it is full of calories, but sometimes that is not as important as ... well, CAKE.

I got this recipe from Mother Hen at Ship Full of Pirates Blog back in 2009.  I'm sorry to say I've lost track of her, both she and her blog seem to have disappeared, but she left behind this tasty recipe:

Pineapple Upside Down Cake
Preheat your oven to 350° and grease your 9 x 13 pan.

You’ll need:

1 can crushed pineapple
¼ cup butter, melted
1 cup brown sugar
3 cups all purpose flour
5 tsp baking powder
1 cup butter
1½ cups white sugar
2 eggs
1 Tbsp vanilla
Drain the pineapple but reserve the liquid.  Mix ¼ cup melted butter w/ the brown sugar, 2 Tbsp of the reserved liquid and the drained pineapple.  Spread it in the pan.

To the rest of the reserved liquid add enough water to make 1 & 1/3 cup.  Set this aside.

Combine flour baking powder.  Set this aside too.

Cream 1 cup butter with the white sugar until light and fluffy.  Add eggs and vanilla.  Beat for 1 minute.  Add the flour mixture alternately with the juice, beginning and ending with the dry ingredients.  Pour over the pineapple mixture in pan.

Bake at 350° for 40 minutes.  Do the toothpick test.

I don’t have a platter the right size to turn this cake upside down . . .

. . . so I don’t.

I thought maybe you were going to say when you have an upside down day to go out for dinner, but then realized you reversed your entry today, doing the Scripture first and then the recipe :) So true to take everything to Jesus, our ups, downs, etc., he wants to hear all and will be there for all we go through.

    Yum on the cake, haven't had one in a long time, but always tasty!

  3. Upside down pineapple was the bday fave of my youngest for a long time. Yum. There really is some upside down feeling kinds of days and taking it to Jesus is definitely the remedy.
