G is for Giant ... Grace

One of the things I love to make for my family is tacos. It is such a quick easy meal. I normally do it on Wednesday nights. It's tough to get home from work, make dinner, clean up the kitchen and walk out the door in time to drive 30 minutes for midweek services. Tacos make it easy!

I like to keep my fixin's in separate bowls. It's easy when you are done to store the leftovers in different baggies. Then tomorrow, it will be easy to have taco salad for lunch.

Sometimes I like to mix it up a little. Giant Empanadas basically takes your taco dinner up a notch.  Here is the basic Giant Empanada recipe which I found at the fabulous Christy Jordan site, SouthernPlate.com. I asked for, and received, her book, "Come Home to Dinner," for Christmas because she is my hero.  I love Southern cooking, and anytime you throw in stories and quotes in the mix, you've definitely got my attention.

An Empanada is like a taco meat pie. Although, the meat filling in the above recipe is fine, I'm planning on putting my regular taco meat in my next Empanada.




Either way, you are going to love it!

  1. Amen, what more can we want than the grace God has extended to us and continues to extend to us!

    I too do the same with our tacos, separate bowls for the ingredients and then use the leftovers for a salad.

    I haven't made an empanada though; will try it soon :)

  2. Hi Jerralea ... I'm not a great taco fan - but when they're offered I'm happy to share .. I love the extras: the salads, avo, the meat and the sauces .. good to go .. Cheers Hilary

  5. Hubby is allergic to corn, so we eat only flour tortillas, and we make all our own Mexican food, as finding it in a restaurant in New Zealand is rare - and when you do, super expensive.
