E is for Easy Does It


One of the realities of having a nightly family table is there are just days where it's hard to squeeze everything in. I love this recipe for Easy Honey Mustard Chicken because it is simple and while it is cooking in the oven you can be doing something else. Perfect for the multi-tasker!

I found this recipe on Pinterest and it has quickly become part of my repertoire.

As with every recipe, I have made it my own. For instance, I am not a fan of rosemary. So, I just left it out. I love to use boneless, skinless thighs in place of chicken breast tenderloins. I found out using thighs instead of tenderloins means adding about 10 minutes more oven time. Also, I did not saute onion and garlic first and then layer it in the cooking pan. Instead, I just sprinkled garlic salt and onion powder after I had poured on my honey mustard mixture. Easy-peasy!

It turns out yummy. Hopefully, you've thrown on a couple extra thighs because the leftovers go very well with a salad in a jar for lunch next day.  You'll feel so spoiled!

Speaking of being spoiled, did you know your Heavenly Father wants to make things easier?  You were not designed to carry a heavy load. He wants to help you with your burdens.

In fact, He wants to make a fantastic deal with you.  You give Him your back-breaking, mind-bending problems. Trust Him to find the solutions to them. He will give you His yoke which is light and easy-to-carry.

Many times, when we feel burdened and heavy laden, it is because of things we have put on ourselves. Instead, He invites us to take on a light load, because He shares it with us. Our part is to trust, and obey Him. His part is make it all work together for our good.
Ahhh.... there's no feeling as freeing as knowing He cares.

  1. So true that Jesus wants us to give him our burdens and he will carry them for us. I love any type of chicken recipes; I think I'll be trying this very soon!

  2. Perfect timing! I JUST finished writing up a post about my last weekend's mountain hike in the snow and how the Lord nudged me to give Him a burden I was holding on to. This was great! and that chicken recipe looks divine except I think I'll put the entire thing in the crockpot on low for the day.....I just found my dinner for tomorrow! thanks!! (my elderly dad, age 83 is with us this week and really likes chicken so I'm making this for his last night tomorrow)....YUMMY!!

  6. I love the thigh too. My favorite part. I'm finding it hard not to take on the burdens of children. They do weigh me down big time. We can do all we can but mostly all I can do is pray. I need to stop worrying after that. It can get exhausting.
