F.F.F. - 02.13.15

Another week is drawing to a close and it is time to step back and ponder ... what made this week different from all the rest?

1. This week, for me, has been a week of organizing. It is sad to say that we are in mid February and I'm still working on 2015 files, but the organizing takes place in the midst of the day to day things that must be done. Organization is a process and it is ever-changing to meet the needs of the right now.  My happy place this week is adding a touch of color to my files with washi tape.  Why not treat myself to cheery folders every time I open the drawer?

2. I get very bored with cooking the same old-same old, so I tried some new recipes this week.  Monday, was the Giant Beef Empanada.  It was pretty good but next time I think I will just fill the Empanada with my regular taco filling.

3. Next, I tried Chicken Tortilla Soup, which tasted amazingly similar to Santa Fe soup, a recipe I got from a blogger from FFF years ago. I can't remember if it was Carrie or Lisa? The main difference between the two was chicken or beef flavor.  Either is good. I'm more often to have cooked chicken shredded up in my freezer and ready to go.




4. Of course, I had to try something sweet, so my next recipe to try were these tender little muffin bites: Flourless Peanut Butter Chocolate Chip Mini Blender Muffins. (Wow, the name is a bigger mouthful than the muffin!)




This was fun to make but next time I will cook them 10 minutes instead of 9.

  1. Oh my...all of your food looks wonderful, Jerralea! I need to take a day and do up some chicken and some beef ...shred it and return it to the freezer. That is such a good idea you have passed on today. :)

  2. Well all this yummy goodness here makes my lunch seem dismal. Glad you had things to be thankful for. We just finished a video series and the topic last night was pivotal experiences which seems to tie in to your quote this week. Have a wonderful weekend.

  5. The muffins look really good, especially the fact that they are flourless. I just reorganized my recipe box with colorful tabs so I understand your excitement.

  7. I love 'fun' office supplies! Those little muffins look scrumptious:p I need to get used to organizing as I go, since I rarely have big chunks of time. It's a good practice.

  10. I've made chicken tortilla soup before and it's so good.....my fave soup though is spinach and cheese stuffed tortellini soup....yummmmy.....

  11. I'm like you -- love to try new recipes and having to adjust them to my own tastes or oven/stove temperatures. Those mini muffins sound intriguing.

  12. I love Mexican flavors so all those dishes appeal to me and I make them once in awhile too. That long winded Muffin name made me laugh. I never was a big sweet baker but now that my hubby doesn't eat any sweets whatsoever homemade sweet treats don't make an appearance at all except for maybe a banana bread here and there for the dayhome kids.

  13. The empanada looks and sounds good - I don't think I have ever had one but would love to try that one! I love Mexican food.

    I like the idea of using washi tape on your folders!

    I've seen those muffins on Pinterest and want to try them for my d-i-l - she's having some stomach issues and trying to go gluten free to see if that helps.

  14. I'm open to trying new recipes but since I'm vegan (plant based, whole food), I seem to always come up with 'kale' and 'broccoli'---just kidding :)

    And you wrote the 'o' word: organize! I love it too!
