DAYBOOK FOR TODAY, MONDAY, MARCH 3
Outside
my window...10°
when I first got up but now it is 18° and the sun is shining brightly on our
layers of snow and sleet.
I
am thinking...I
should be able to get out of my driveway tomorrow.
I
am thankful...
the electricity, nor the internet, went out during yesterday when sleet was
hitting our windows and the wind was howling.
In the
kitchen I am creating
... freezer meals. There is much cooking going on. Whenever I am home for
extended periods of time, that is the time I get the urge to cook. Now is
when I love to try out all those ideas I've been seeing in Pinterest.
Yesterday, I made apple cake, Italian Wedding Soup (which might be my favorite
food on the planet) and chili. Today, the crock pot is full of chicken
cooking for future delicious meals. Baked eggs are cooling on the counter for
make-ahead breakfast sandwiches. Chicken and dumplings and Pumpkin Chipotle Soup with Chicken and Barley
will be made today.
Yes,
I'm cooking ahead for the freezer. I love on a day when either I'm
uninspired or out of time, I can pull out something already made and have
dinner quickly.
I
am wearing...jeans,
heavy socks and a purple flow-y shirt.
I
am going...
no where. Sometimes the better part of wisdom is to stay home. The
last winter storm saw us in a hurry to get out. The result was the
transmission went out in one of our vans. I'm content to stay home until
I can just drive right out of my drive way and save $1200 on car repairs.
I
am wondering...if
this is the last winter storm for this year ...
I
am reading...1
Peter 3. I've also started a book by Timothy Lewis entitled, "Forever
Friday."
I
am hoping...Janae's
pregnancy and delivery goes well and that the twins will be healthy. I already
know they will be loved beyond measure so I'm thinking they will be happy
babies.
I
am looking forward to...Saturday
and a lunch date with my baby girl.
I
am learning
something new every day!
Around
the house...it
smells good with foods cooking and candles glowing.
I
am pondering...
subjects for blog posts. Anyone have a subject they would like to
discuss?

ReplyDeleteMy Freezer Days always make me happy. I too love getting lots of food put up for those nights when I'm uninspired or just plain tired. Two of our favorites are White Chicken Enchiladas and Chicken Spaghetti. I'll have to try the Italian Wedding Soup. Thank you for sharing your day.
